Fruit fibres improve the quality of gluten free bakery products. Herbagel BW 790/ 791/792 are combinations out of insoluble and soluble fibres and, depending on preferred end product, are suitable for light but even darker breads with wholegrain character. Products from the Herbagel BW series do not only increase the fibre content but offer many more advantages. The excellent water binding leads to an improved dough structure and therefore better processability. It also enables an increased dough yield and fresh-keeping.
